Capriole

GARGANEGA BIANCO VENETO IGT

The purest and most ever-changing expression of Garganega. A natural wine that engages in a dialogue with the climate and wildlife of the Colli Berici, changing its character to follow the rhythm of nature.

Garganega is the quintessential native white grape variety of the Colli Berici, known for its late ripening. Within our ecosystem, we never force nature’s hand: depending on the climatic conditions of each vintage, we choose the most suitable interpretation. When the season calls for it, we harvest earlier to create a fresher, more vibrant and lighter wine; in warmer, more concentrated vintages, we allow the fruit to fully express itself, moving towards a richer and more complex style, supported by a longer or shorter period of skin maceration. It is a genuinely natural wine, changing its character from year to year to reflect the true expression of the land.

The label of Capriole features a delicate watercolor by Vicenza artists Carlo Stratta and Angela Albera. The name contains an ironic play on words inspired by life in our open-air laboratory. On the one hand, it evokes the roe deer that inhabit our woods and are particularly fond of the shoots and bunches of these grapes; on the other, it refers to the agronomic “somersaults” we have to come up with every year to protect the vineyard and safeguard the harvest from these greedy visitors.

Characteristics:

Grape: 100% Garganega, a native white grape variety of the Colli Berici.

Fermentation: spontaneous, carried out by indigenous yeasts naturally present on the grape skins, without the addition of selected yeasts.

Vinification: Natural still white wine. Depending on the seasonal climatic conditions, vinification may involve a shorter or longer period of skin maceration (orange wine), aimed at extracting structure and aromatic complexity.

Ageing: Carefully stored and left to mature in the cool, silent darkness of the historic cellars of Palazzo da Schio, Ca’ d’Oro in Vicenza.

Tasting Notes: in the glass, Capriole reveals a fascinating profile that enhances floral notes and typical aromas of ripe yellow fruit, enriched by a distinctive minerality characteristic of the Colli Berici terroir. On the palate, the balance lies between freshness and an enveloping structure, with complexity varying according to the vintage and the degree of skin maceration. Thanks to its versatility and structure, it is an excellent white wine to pair with white meats and matches beautifully with bloomy-rind cheeses.

Alcohol content: 11% vol.
